Overview

Small chops are the trays of puff-puff, samosa, spring rolls, peppered gizzard and chicken that turn up at nearly every Nigerian party. People order them for birthdays, office events, church programmes and owambes, usually a few days ahead, and most orders land on Fridays and Saturdays. Hosts would rather pay someone reliable than fry for a hundred guests themselves.

You earn the difference between what a pack costs to make and what you charge for it, and you can start from a home kitchen with one helper on busy days. The common mistakes are underpricing, and taking big orders without a deposit so you carry the cost of ingredients yourself. Late delivery loses clients faster than average food does. It suits someone who cooks well, plans ahead and does not mind working most weekends.

Works well in Lagos, Abuja (FCT), Port Harcourt, Ibadan, Benin City, Enugu
